I think there are many people like me who are too much love the taste of delicious muradabadi biryani recipe. I have tried a lot of Indian biryanis like Hyderabadi biryani also but this is unique for its aroma that comes from the freshly ground spices. This one is my favorite. Served them with raita or red n green chilli chutneys.

Ingredients to make Muradabadi chicken biryani

  • XXL basmati Rice 500 gms
  • Chicken 1 kg
  • 1 liter Water
FOR POTLI :


  • 1 big size sliced Onion


  • 4 Green Chillies

  • 2 inch Ginger sliced

  • (6 garlic, 8-10 cloves, 4 green cardamoms, 2 black cardamoms, 1tsp cumin seeds, 1dagad fool,1 inch Cinnamon, 1 Javitri, 10 Peppercorns, 1 Bay leaf),

  • 1/2 tsp Hing

For Masala :

  • 2 tbsp Oil

  • 1 Bay Leaf

  • 2 Green Cardamoms

  • 6 Cloves

  •  1 tsp Cumin seeds 
  • 1 tsp Shahi Jeera 

  • 2 big size Onions

  • 8 Green Chillies

  • 10-15 Mint leaves

  • Chopped Coriander leaves

  • 2 medium-size Tomatoes

  • 1 tbsp Ginger garlic paste

  • Salt to taste

  • 1 tsp garam masala powder

  • 1 tsp coriander powder

  • 1 tsp Cumin powder

  • 2 tsp Red Chilli powder

FOR BIRYANI LAYER :


  • 1 tsp keora jal

  • 1/2 tsp red food color

  • 1/2 tsp yellow food color

  • Chopped Coriander leaves

  • Juice of 1 Lemon

  • 1tbsp Ghee (optional)

Preparation Time:- 15 mins
Cooking Time: 45 mins

How to make Muradabadi chicken biryani?


  1. Wash and soak the rice for half n hour.
  2. Put vinegar in chicken pieces & keep them aside for 10 mins.
  3. After 10 mins wash & drain the chicken pieces. Put garlic paste in it and leave them till you prepare the potli. 
  4. Now take one cotton cloth for potli put the potli ingredients like onion, garlic, ginger, green chilies, bay leaves, cardamoms, cloves, Javitri, cumin seeds, etc. 
  5. Now make the potli like this. 
  6. Take a pressure cooker place 1-liter water in it now add garlic chicken pieces, 2 tbsp salt, and the prepared potli. 
  7. Cover the lid and take them a whistle in high flame then turn off the flame. 
  8. Let the pressure release. Now open the lid take out the potli. 
  9. Squeeze species juice from the potli like this. 
  10. And transfer the chicken & broth water in another bowl. 
  11. Now Heat oil in the pressure cooker put cumin seeds, bay leaf, cardamoms n cloves, once they splutter.
  12. Add onions, ginger garlic paste and saute till golden/pinkish in color. 
  13. Put chopped tomatoes, green chilies and saute. Add cumin powder, coriander powder, red Chilli powder n salt. 
  14. Now add chicken pieces. 
  15. Add Garam masala powder, chopped Coriander leaves, mint leaves and half lemon juice. 
  16. Now put chicken broth water in it and give a boil. Now add half (250 gms) soaked Basmati rice in it. 
  17. Allow to give a whistle, now turn off the flame. Wait till they release its pressure. Pour red and yellow food colour in it. 
  18. Now take a Deguchi boil some water in it add Garam masala powder, salt, refined oil 1 tsp and another half soaked rice (250 gms). 
  19. When the rice cooked more than 3/4th turn the flame off and drain it. 
  20. Time to give a layer. Take one big semi flat bottomed bowl remove biryani from the pressure cooker, put white steamed rice on it, drop 1 tbsp refined oil or ghee, squeeze half lemon juice and 1 tsp kewra jal. Now cover the lid for at least 10mins. 
  21. Give a good light hand mix & Sprinkle Coriander leaves. 
  22. Serve your flavoured Yummy hot biryani with the onion salad, veggies raita and chutneys.
