Dahi bhalle chaat is one of the easy recipes and delicious sweetened food in India. Fried urad dal bhallas served dredged in chilled sweet Curd and tasty chutneys. A good scattering of roasted cumin powder just before serving is a must for that robust earthy taste and bhalla recipe in India.

Ingredients for Dahi Bhalle Recipe
o   Split Black Gram 3/4 cup
o   Yogurt 4-5 cups
o   Salt to taste
o   Raisins 15-20
o   Ginger chopped 1-inch piece
o   Green chilies chopped 2
o   Gram flour (besan) 2 tablespoons
o   Oil to deep fry
o   Rock salt (sendha namak) 1 teaspoon
o   Sugar 1 tablespoon
o   Green chutney as required
o   Sweet date and tamarind chutney as required
o   Roasted cumin powder 2 teaspoons
o   Fresh coriander leaves 2 tablespoons
Method
Step 1
Wash dal and soak in two-four cups of cold water overnight. Drain off extra water Next day.
Step 2
Grind dal to a smooth paste. Add salt, raisins, ginger, green chilies, and gram flour to the batter and whisk for ten minutes.
Step 3
Heat sufficient oil in a Kadai. Take some butter in full of a tablespoon in it and fry until light golden. Drain the bhallas in water until bhallas soak a sufficient quantity of water. Leave for two minutes. Squeeze between your palms to drain out water.
Step 4
Whisk curd well with rock salt and sugar to taste.
Step 5
To serve, place bhallas on a plate and cover with yogurt. Drizzle mint chutney and sweet date and tamarind chutney. Sprinkle roasted cumin powder.
Step 6
Garnish with coriander leaves and serve immediately.

Tips when making bhallas.

You can stuff these bhallas with a combination of raisins, crushed cashew nuts and chopped coriander leaves to make it delicious. In that case, do not add raisins to the urad dal batter.
